Energy Bites

I love snacking. All day, everyday.

I have a hard time making snacks though because I like sweets. Eventually with sweets you eat too much though and you feel sick. Baking is also a pain sometimes, so there is a very fine line.Energy Bites 1

These energy bites are very simple and very good. Actually…I ate most of it before I could even turn them into bites. You might even enjoy it as a granola-type food. Either way, it’s definitely a snack I’ve thoroughly enjoy.

What you need:

  • 1 cup oatmeal
  • 3/4 cup peanut butter (you could probably use another nut butter if peanut butter isn’t for you)
  • 1/4 cup honey
  • 1 cup unsweetened coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla

After that, it’s simple! Mix it all together. Throw it in the fridge to firm up the mix. Roll them into balls and you’re ready to go! Since I was tired I ended up leaving the mix in the refrigerator overnight and making the balls in the morning. This is probably why I didn’t end up with many energy bites since I was hungry when I was rolling them. I’m sure you can adjust the recipe to add more honey and less nut butter if you like it sweeter. Or even add sweetened coconut flakes, but I like them less sweet. I don’t think you can go wrong!
