Healthy Oatmeal Banana Nut Muffins

Healthy Oatmeal Banana Nut Muffins #healthy #recipe #bananaA great, healthier alternative to the classic banana nut muffin.

I was trying to figure out a healthier alternative to the classic banana nut muffin. By healthier I mean, no oil or lots of sugar… Limit that butter and can the crumble. These banana nut muffins use whole wheat flour, rolled oats, applesauce and honey which lowers the calories and fat a lot.

It’s 3 months away from the wedding… Gotta start losing weight! Any tips or words of encouragement would be much appreciated :-)

3 ripe bananas
1/3 cup apple sauce
1 tsp vanilla
1 egg
3/4 cup low fat buttermilk
1.5 cups whole wheat flour
1 cup rolled oats
1.5 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup honey
1/2 cup walnuts

In stand mixer, mix together wet ingredients; bananas, apple sauce, vanilla, buttermilk, egg, honey. Blend together until pretty smooth.

In a separate bowl, mix together dry ingredients; flour, oats, baking soda, baking powder, salt, cinnamon, nutmeg.

Add dry ingredients to wet and blend in the stand mixer.

Fold in walnuts.

Grease a large muffin tin (6 muffins) with spray.

Spoon mixture into muffin tin, sprinkle top of each muffin with additional chopped walnuts.

Bake at 350 for 35-40 minutes, or until light brown and a knife comes out smooth.

Makes 6 good sized muffins. Because of the oats and whole wheat flour, the muffins do not rise a ton. They are still moist and airy, but they will not be over-sized. The whole wheat flour helps fill you up for longer as well!
