Lavender Lemon Honey Bars

Lavender Lemon Honey Bars are the perfect summertime sweet.

Summer time is so close you can almost taste it in the air; hot sticky days mixed with the heady scent of flowers. My mom likes to buy in bulk and every summer our house was filled with copious amounts of fruits. We used to make lemonade out of all the lemons before they would go bad. So for us, summer snacks would consist of shortbread cookies and lemonade.

I love floral notes in my desserts and lavender is one of my favs! Lavender is the perfect accent to the tart lemons. When I’m in Savannah, I always try to go to the Back in the Day Bakery where they have lavender shortbread cookies. They are the best! This recipe is inspired by their cookies and my childhood summers at home! I hope you enjoy!

Ingredients
For the crust:

  • 1/2 lb unsalted butter (2 sticks at room temp)
  • 1/2 cup granulated sugar
  • 2 cups flour
  • 2 tsp lavender
  • 1/8 tsp salt

For the filling:

  • 4 eggs at room temp
  • 3/4 cup of sugar
  • 1 cup of honey
  • 3 Tbsp lemon zest
  • 1 cup lemon juice
  • 1/2 cup flour
  • 3 Tbsp Powedered Sugar (for dusting)

Directions
Preheat the oven to 350 degrees F.

Crust: Cream butter, sugar, and salt until light with paddle attachment in electric mixer. Mix lavender with the flour then add to the creamed butter mixture until just mixed and dump onto floured surface. Flatten the dough and press into 9×13 in baking pan. Chill.

Bake crust for 15 min or until lightly browned. Cool on wire rack and keep the oven on to bake the filling.

Filling: Whisk eggs, sugar, honey, flour, lemon zest and juice together. Pour over crust and bake for about 30 min until the filling has set. Let cool to room temp and dust with powdered sugar.

Cut, Serve, and Enjoy!

  1. When and how do you add the lavender? It shows it is an ingredient for the crust but I don’t see it mentioned again in the directions.

    • I’m so sorry, didn’t realize I forgot that part! Mix the lavender with the flour and then add to creamed butter mixture.
