Peach, Plum & Apricot Cupcakes

Recently, I have been buying our produce from the Flea Market. The produce is always just as good as in the stores, but for a quarter of the price. I normally walk out of there with 6 bags of produce, all for under $25.

This past weekend they had peaches, plums and apricots on sale, yay! (I thought) until I got home and they were a little on the tart side to be eaten as is… but that’s always a happy problem, cause it means I get to bake!

These peach, plum and apricot pound cake cupcakes with creamy cream cheese icing are the perfect treat. The really sweet cupcake and icing are the perfect compliment to the slightly bitter fruit.

* Makes 12 Jumbo Cupcakes

Ingredients for the cupcakes:

  • 3 Peaches
  • 3 Plums
  • 3 Apricots
  • 6 eggs
  • 3 sticks of butter
  • 1/4 teaspoon salt
  • 2 1/4 cups AP flour
  • 1 tsp baking powder
  • 1.5 cups sugar
  • 1 tablespoon vanilla extract
  • brown sugar
  • honey

For the icing:

  • 8oz cream cheese
  • 1 stick unsalted butter
  • 1 1/4 teaspoon vanilla
  • 6 cups confectioner’s sugar

For the Cupcakes:

Preheat the oven to 325 degrees.

First, prep all the fruit. Remove the pits and cut each piece into eigths. Set it aside until the batter is made.

Next in a mixing bowl, mix together the flour, baking powers and salt.

Then cream the butter until it’s alight and fluffy in an electric mixer. Then cream the sugar into the butter. Once the sugar is fully integrated add the vanilla then the eggs, 2 at a time.

Once all the wet ingredients are creamed together, add in the dry ingredients half at a time. The batter will be really thick (this is a good thing)

Using an ice cream scoop, scoop the batter into the lined, oversized cupcake tins.

Next place the fruit on top of the batter in a flower like pattern. Each cupcake got 6 pieces of fruit. I made 3 cupcakes of each fruit, and 3 cupcakes that had pieces of all three fruits in them.

Sprinkle a teaspoon of brown sugar over the fruit on each cupcake, then drizzle lightly with honey.

Bake the cupcakes for 35-40 minutes. Once baked, remove cupcakes and let cool on a rack.

For the icing:

Cream together the cream cheese and butter until nicely integrated together and smooth. Then blend in the vanilla.

Then mix in the sugar, 1 cup at a time.

Now they are ready to serve!

These cupcakes are delicious, my husband LOVES them. My favorite part… They are pretty! When you cut them open you can see the beautiful fruit and color perfectly. The plum ones were definitely my favorite, but out of all 3 fruits, plums are my favorite, so that was kind of a given. What’s your favorite fruit to put in cupcakes?
