Thai Cucumber salad is a sweet and spicy salad with only a couple ingredients, but is absolutely delicious.
And one of my absolute favorites. I have an obsession with all foods sweet and spicy… Sweet chili, honey & habanero , ect. and this salad satisfies my sweet and spicy craving every time. I was first introduced to this salad eating out at a Thai restaurant, and now make it all the time at home. It only takes a minute too!
- 1 cucumber
- 2 tbsp sweet chili sauce
- 1 tsp. apple cider vinegar or rice wine vinegar – depending what you have
- 1 tbsp chopped peanuts (not salted)
Step 1. Chop up your raw peanuts. Don’t use salted or honey roasted, it will make the whole salad take like the peanuts.
Step 2. Peel the cucumber. Then I use a fork and scrape into the cucumber forming little indents. I think the cucumbers hold more of the dressing and peanuts that way. You don’t have to peel the cucumber though, I have eaten this salad out many times where the cucumbers still had the skin on.
Step 3. Mix your sweet chili sauce and vinegar to make the dressing.
Step 4. Dress the cucumbers with the dressing and the peanuts.
See, so simple, yet so delicious (and colorful!). Hope you enjoy this salad as much as I do!
You can add crab or shrimp to this salad to make it a healthy full meal as well.
