Baking from scratch is not something I have done a tremendous amount of before, but I was ready to give it a whirl.
I found this recipe: White Chocolate Mousse Strawberry Cake. (Not at all ambitious for a somewhat beginner attempt. HAHA.) But, in all honesty it was easier then I thought and tasted AWESOME!
|Indredients:4oz White Choc Chips
1/2 cup Heavy Cream
1/2 cup milk
1 tbsp rum
1/2 cup butter, softened
3/4 cup Granulated Sugar
2 cups plain flour
1 tsp baking powder
pinch of salt
2 lbs fresh strawberries
3 cups whipping cream
2 tbsp vanilla
9oz White Choc. Chips
1.5 cups whipping cream
1. Preheat oven to 350, line 2 9inch cake tins w/ parchment paper2. Melt choc. and heavy cream for cake in double burner. Stir in Milk and Rum, set aside to cool.3. In Bowl, beat together sugar and butter. Then beat in 1 egg at a time. In separate bowl mix flour, baking powder, and salt.4. Alternately mix in the chocolate mixture and flour mixture to the egg / sugar mixture.5. Divide equally between the 2 cake tins, and bake for 20-25 minutes or until skewer test. Cool in tins for 10 minutes, then cool on rack.
6. Prepare Filling. Melt chocolate, cream and rum. Chill mixture until set. Whip until mousse-like.
7. Cut both cake layers in 1/2. Layer cake (cake, mousse, strawberries)
8. Whip cream and vanilla. Spread to cover cake and decorate.
